Certificate Program:

This is a short-term program that can be completed in one year or less. It is designed to equip you with a specialized skill set for immediate employment or job advancement. All of the certificate courses are also included in the related A.S. degree program so it can be used as a building block toward completing the degree -- which will help improve your earning potential.

  • Baking and Pastry Arts (35 credits)

Program Description:

The bakery business is booming, especially here in Florida, where jobs are available in our many theme parks, resorts and restaurants, as well as in catering and banquet services. Valencia's Baking & Pastry Management program is the only such degree program in the state, and draws on chefs from Walt Disney World and Universal Studios to instruct students and provide a broad view of career opportunities and the skills required to succeed. Students learn in a state-of-the-art production kitchen and gain hands-on instruction in confectionary artistry, breads, pastries, cakes, chocolates and more.

Typical Tasks may include:

  • baking and pastry making including breads, cakes, pies, icings, puddings, fillings and desserts
  • performing confectionary artistry
  • catering and banquet management including training service personnel, preparing food cost estimates and stewarding control sheets.
